In my opinion, Ajito is the best Japanese restaurant in Aix-en-Provence! The quality of the dishes is remarkable and truly resembles what you'd find in Japan. The salmon sushi is delicious, but there are also other fish sushi options to discover (I recommend ordering an assortment of sushi to sample different fish). There are also specialties like soft-shell crab (fried soft-shell crab) or kakuni (stewed pork), which are rarely found in other Japanese restaurants in France.
The price is slightly higher than other Japanese restaurants, but the quality is more than justified!

The food is excellent; I thoroughly enjoyed it.
The staff is friendly, and it's also pleasant to hear Japanese spoken while eating sushi.
The only thing missing is a slightly more themed decor 😉
The prices are indeed high, but if you opt for a lunch or dinner menu, it's quite affordable.
I would gladly return.
