Chez Gilbert sur Cassis

Good food. The foie gras appetizer was magnificent. The leg of lamb was quite good, although I would have preferred a slightly larger portion (I have a good appetite, so some will certainly appreciate the generous size). On the other hand, if you're looking for a really good fish soup, this is THE place to go. The service staff was excellent. The setting is lovely, although a bit noisy as it's located on a very busy pedestrian street during peak season.

Beware of resting on your laurels. This is an iconic Cassis restaurant that I know very well, having been there many times. While the bouillabaisse remains a sure thing, the rest is declining. Less flavorful, and the side dishes make me miss their famous ratatouille. The sea bass on the à la carte menu, priced at 50 euros, was overcooked and offered no added value compared to the same sea bass served on the set menu but at twice the price. The desserts were too heavy… In the end, a very big disappointment.

My wife and I had a fantastic experience here on our honeymoon. We chose this restaurant specifically because of the good reputation that it had for making authentic bouillabaisse, and it did not disappoint. We went right at the start of their dinner service, and were promptly sat at a table overlooking the gorgeous port. We both ordered the bouillabaisse and a glass of local white wine. Service was friendly and fast. Our wine arrived almost immediately, soon followed by the beginning of our meal. Authentic bouillabaisse is elaborate and consists of several parts. First came a large basket of crostini-style croutons and bowl of rouille—these are standard accompaniments to bouillabaisse. A few minutes later, our server arrived to show us a huge platter with the freshly cooked fish and potatoes that would arrive with the soup. The fish was then brought back to the kitchen to be cleaned/cut. After another brief wait, broth arrived that serves as the basis for the whole meal, followed by the fish itself, which came deboned and trimmed, so you can easily scoop chunks of the flaky, tender meat into the broth. The multi-step presentation of this is part of what makes this dish special. As for the taste: fantastic. The broth is a dark, rich color, but the taste is extremely light and gently oceanic. From its appearance I was expecting something heavy and deeply umami-flavored, perhaps akin to a tsukemen broth. Instead the taste is very delicate, much lighter than its deep, rich color may suggest. The fish, which consisted of several types of fish, was perfectly cooked. The seasoning of everything is complex, yet minimal. It tastes oceanic and smooth. Our server told us that an order of the bouillabaisse is exactly the right amount for one person, and they were right, I was stuffed after enjoying this. Although it is very filling, this is not a heavy meal. I loved this meal and would recommend it to others. I saw that some reviews mentioned being disappointed by the bouillabaisse, and I could see why, if the reviewers are expecting something heavier, saltier, more akin to a stew.

Chez Gilbert needs no introduction: the king of bouillabaisse in Cassis. The legend is true: A meticulously selected range of rockfish + A vibrant atmosphere where the owner cracks jokes and teases customers about their favorite football club while refilling their bowls with broth! The rouille is to die for. At the end of the meal, the strawberry soup perfectly completes an experience that leaves you utterly satisfied!

We go there every year, everything is great.

We found that the restaurant failed to uphold several essential commitments outlined in the Bouillabaisse Charter, to which it subscribes. The number of fish varieties served was insufficient. While the charter emphasizes a bouillabaisse composed of six to seven types of fish, only four varieties were offered. Furthermore, certain traditional service procedures were not followed, notably the presentation and carving of the fish in front of the customers, which are integral to the expected experience in an establishment claiming to adhere to this charter. The broth, served a good 10 minutes prior, was cold by the time the fish arrived! And barely had we finished our meal when the waiter, acting on Gilbert's orders, presented us with the bill using the card reader…

We had a very pleasant time! The fish soup was generous and delicious! The complimentary appetizers were lovely, and the service was very friendly… I highly recommend it!!
