Experienced chef Gilles Demaure delivers refined and delicate cuisine, inspired by his inspirations, combining precise cooking techniques, appropriate seasonings, and the finest quality of the selected raw materials. All this with an open kitchen, where the chef shares his techniques with the most curious and humble diners about his work with his partner Agnès Vaillier in the dining room, who masterfully leads the service, combining professionalism and approachability. To tempt you to visit this beautiful establishment, here are a few memories of some of the tasting menus: - How can we not highlight this superb lobster triptych, which illustrates the establishment's entire philosophy: behind its apparent "simplicity" lies the mastery of cooking a beautiful medallion, prepared fresh to order, as does the carpaccio seasoned with a superb herbaceous oil. The lobster espuma, delicately enhanced with Espelette pepper, is a beautiful finishing touch. - The beef fillet with morels is also a delight, where the rare cooking fully respects the flavor of this noble cut, while highlighting the magnificent meat jus that required a lot of work beforehand. The truffled potato cake (Pomme Anna style) is equally remarkable. - The dessert section emphasizes seasonal fruits, just as well-crafted as the rest. Like its Sauternes-roasted apricots with this superb pistachio financier "fresh from the oven." A truly wonderful establishment.
