I chose "bleu" (a type of beef) – tender and flavorful in texture and taste – a rich, dense, and comforting cheese gratin, a meltingly soft baked potato (a grainy variety?), and a small salad with a robust dressing. With a touch of humor, in this winter/spring setting with its harsh cold and/or wind outside, friends entering this beautiful site, please close the large double doors securely for the comfort of the gourmet guests seated near the door...
