We absolutely had to write to you after our lunch at Jean des Sables, as we were so captivated by what you are creating. Your cuisine is remarkable. It is original, personal, exquisitely refined, and above all, surprisingly light. Nothing is showy, nothing is unnecessarily complicated: the combinations are perfect, the flavors are clean, the dishes elegant and flawlessly executed. We left the table with the rare feeling of having discovered and tasted so much, yet without any heaviness. What perhaps impressed us most is your ability to offer truly creative cuisine without ever losing sight of the essential: taste. There is thought, technique, and personality in every dish, but always in service of the product and the pleasure it brings. It is a cuisine that is inventive, delicate, indulgent, and remarkably clear. And then there is your youth, your enthusiasm, and this adventure that you have only just begun together. Honestly, seeing such a strong identity and level of expertise at this stage is truly impressive—and we're especially eager to see how far you'll go. A fantastic discovery! The new owners have truly succeeded. A very warm welcome, carefully prepared cuisine, and above all, delicious dishes. As longtime customers, we haven't found the spark that used to make this place so special. We were disappointed by the menu, which was no longer up to par. A shame, especially for a wedding anniversary meal.
