We had dinner at the restaurant. Having read the reviews, we were quite excited. It was a disappointment. I wouldn't recommend the lobster set. The chocolate soufflé with Armagnac dessert was disappointing, in my opinion. Overall, we were disappointed.

It was our first time, and what a wonderful discovery! The sunset view was magnificent. The cuisine was refined and incredibly delicious; the flavors and textures were superb—the chef's work was outstanding. And the service was excellent. The restaurant's exterior, marked by the passage of time and its ravages, doesn't inspire confidence. But once inside, the warm welcome and the beauty of the bar and dining room quickly put us at ease. The refined presentation of the various gourmet dishes immediately whetted our appetites. Combined with the harmonious blend of textures, flavors, and the use of fine seasonal ingredients, we discovered an excellent restaurant and enjoyed a truly delightful culinary experience. We had an exceptional time at this gourmet restaurant overlooking the ocean. Each dish was a true work of art, as visually stunning as it was delicious, with perfectly balanced flavors. The setting is simply magnificent.
The service was on par with this experience: warm, attentive, and always discreet, contributing fully to the quality of the meal.

The food was perfect, we ate very well, but we were disappointed that the service wasn't up to par.
Our order was taken after a table that arrived after us; their aperitifs were even served before ours. We were brought the amuse-bouches even though no one had asked if we wanted them. When we pointed this out to the waitress a good 10 minutes after the amuse-bouches had been served, she replied casually, without any apology, "Yes, well, I'm here, I'll take your whole order!" And when we asked if we could order desserts later, she said, "No, it's on the menu, didn't you read it?" This might be understandable if it's explained properly, especially for organizational reasons in the kitchen, but clearly her way of responding was inappropriate.
Before the end of our meal, we also asked for water and bread, which never arrived. All we got was a "oh yes, sorry," without any offer to bring them!
These service issues really detract from the overall experience and make us reluctant to return.

What a fascinating experience! I discovered that at Jean de Sable, fine dining is like an Olympic sprint. While the food is absolutely excellent, and the six-course "Stroll on the Sand" menu is flawless, the service seems designed to clear the dining room in record time.
Arriving 30 minutes early for our 8:00 pm reservation for aperitifs and to enjoy the beautiful weather, we were greeted by a closed terrace door and an immediate order to choose our courses before we could even say "aperitif." The marathon continued unabated: ejected from the terrace mid-drink under the pretext that it closed at 7:45 pm, we then watched the six courses arrive at a breakneck pace, with wine poured assembly-line style as if the cellar were about to self-destruct.
Despite our explicit request to take our time between courses, the staff seemed to be rushing, going so far as to turn off the kitchen lights while we were still in the dining room. For an establishment of this caliber, dining without a tablecloth only to find the waiter waiting for us at the register, the bill already on the counter at 9:50 p.m., is a rare display of rudeness.
On a Friday evening, with only five tables occupied, one would have hoped that our presence wouldn't be treated as a mere end-of-service chore. The Chef's talent deserves so much better than this disregard for the customer. Perhaps a simple smile would have made it all go more smoothly.

One of the best meals we've ever had. The flavors, the combinations, the seasonings—everything was just right and delicious. Special mention goes to the cauliflower with its pearly oil and the squab. A huge thank you to the chef and the entire team for this wonderful experience; you even managed to make me like fish again.
