What joy and pride to have finally discovered this place! Holding a Michelin star for so long, against all odds, elevates you to the status of a sacred institution. The new Navigo pass policy certainly played a part: I discovered that the commuter train, and then the new tram, brought me almost to the doorstep of this haven of peace on this beautiful June day. Crab in shellfish jelly; sea bream with lemon, ginger, baby spinach, and yuzu juice; braised sweetbreads with a reduced jus; chocolate puff pastry crisp with ice cream, espuma, puffed rice, and a warm sauce—the crowning glory of a chef "born in a pastry shop." A true delight, accompanied by a 2020 Pacherenc du Vic-Bilh Stratéus, with its profound minerality and lingering, tangy finish.
