A lunch that truly honors the region—and believe me, I'm hard to impress when it comes to Norman cuisine. This meal reminded me why we keep coming back to the Pays d'Auge. Chefs Amy and Samuel possess a rare quality: they respect the local terroir without being confined by it. For the starter, pan-seared foie gras—poached pears with spices, candied beets, crispy brioche, and a Port and Calvados "Château du Breuil" sauce. A dish that tells a story. Meltingly tender, generous, complex—it melts in your mouth as it should always do. The Pays d'Auge duck breast as a main course—accompanied by conchiglie pasta stuffed with mushrooms and herbs, topped with Parmesan cheese and a spiced poultry jus—surprised me in the best possible way. The idea of ​​stuffing pasta with Norman duck is bold, and it works incredibly well. The portion was generous, the duck breast cooked to perfection, and the jus had a warming, yet not overpowering, spiced aroma. The chef came to chat with us in the dining room—a passionate individual with a true vision. This blend of modernity and local roots is exactly what Norman cuisine deserves. We ate and drank very well—and we'll be back. Perhaps for dessert this time, which we unfortunately didn't order.

What a wonderful lunch at Le Dauphin! We came for a midday meal and left utterly charmed: by the food, the setting, and the people behind it. I started with the langoustines just seared, served with a velvety pumpkin cream, sautéed mushrooms and a fruity coulis — delicate, perfectly balanced, and beautifully presented. The main of slow-braised beef cheek with crispy rösti, and a rich glossy sauce was exactly the kind of dish you want on a leisurely lunch: delicious, yet comforting, technically excellent. We finished with a lovely cheese plate — a great selection and generously served. The wine list deserves a special mention - we loved the precise selection. We opened with a wonderfully refreshing house cocktail, homage to the local produce and moved on to a bottle of Châteauneuf-du-Pape. The atmosphere is warm and elegant without being stiff, the kind of place where you genuinely relax. What made the experience extra special was the chef coming out to talk with us. You can feel the passion behind the menu, there's a modern, creative spin on French gastronomy here that feels fresh without losing its roots. The only regret? We didn't leave room for dessert — and that's entirely on us. We'll be back just for that. Don’t miss this hidden gem in Le Breuil-en-Auge.

A change of chef and a great success for the kitchen; congratulations to the Chef who goes to the tables and is undoubtedly heading towards excellence, just like the two young waiters. It's likely that the visible stress of the Maître d'hôtel was related to his diligence in managing the staff and addressing the negative reviews of this establishment linked to the previous chef.

Amy Terbrak... remember her name. This young chef cooked us a memorable gourmet lunch. Everything was perfect. It's in the top 5 best restaurants in Calvados. Excellent value for money, wonderful decor, impeccable service. We loved it. Guillaume
