Superb place. During a meal at the gourmet restaurant at Chef Xavier Mathieu's table, with our friends, we had an incredible time.
A very friendly welcome from the restaurant service. A quality sommelier. And extraordinary cuisine!

I highly recommend! Rainy afternoon at the Phébus hotel spa: A sublime setting, a sensory shower that smells of Provence and a deep tissue massage for two, superb. And the outdoor jacuzzi in the rain 🤩. Thank you to the whole caring team for this precious moment.

A magical moment at the spa of the Le Phébus&Spa hotel! A quality Provençal establishment surrounded by nature. The place is chic and welcoming, the welcome and service are top notch! I took advantage of the Lunch&Spa package and this moment of relaxation at this hotel was perfect. The quality of the service, the setting, the little touches, the infrastructure provided and the refined lunch (very good!) convinced me, I would come back!
During lunch the chef came to greet all the customers which was very appreciated! The swimming pool and the pretty terrace overlook Roussillon. Finally, the hotel has a gourmet restaurant.

We needed a moment of relaxation and it was a wonderful Provençal break that we experienced.
A great experience due to the location, the panorama and of course the taste pleasure.

Pour fêter mon anniversaire de mariage, c'est un super retaurant avec une vue magnifique sur le Roussillon. Le chef nous a fait de très bon plats, même mes fille de 11 et 17 ans ont apprécié cette cuisine. Le chef nous a salué à la fin avec un petit cadeau (fondant au chocolat) à emporter. Très bien!

Sans doute la meilleure table du Luberon.

Staff was very friendly and accomodating. We arrived a bit early but were offered drinks from the bar, pricy but good. Attentive service but the place wasnt exactly packed. Once it was fuller and several tables were in the midst of the dessert marathon all at once, the staff seemed a touch overstretched but were friendly; perhaps we were overly doted on too much when we were one of two tables early on. Either way, dishes were well paced and presented. English explanations not a strong point; the menu is occasionally sparse as well.
Overall the food was all interesting at worst and an easy delight in a few dishes. Our first and second courses were straightforwardly delicious, goat milk on...I suppose a bread lace with an olive concoction was a standout dish. Some dishes were perhaps a bit larger than expected. It's hard to decide in a tasting menu whether one ought to strive to finish everything lest the portions depend on it, especially if something bracingly rich is up. Not really so here. The portions were very generous, for a tasting, particularly dessert. We should have paced ourselves more conservatively.
Some of the dishes were impressionistic of dishes I havent had, or perhaps were consumed a bit carelessly when they required a touch of thought. How long should a fairly dry corn wafer sit in gravy before it is really giving off the desired texture intended, for an evocation of shrimp and grits, and is there some Provencal dish I ought to know here, aside from the very American tradition of grits Im familiar with? A mystery, didnt quite find anything sublime, though it all got eaten anyway.
So, a nice evening for us. Not the most approachable food or presentation Ive ever eaten, but a very fun peek at how one chef approaches vegetables in particular, and how to showcase olive oil and a talent for ice creams in unexpected places. If I was going to pick one place in France and wanted a very traditional fine dining experience Im not sure it would be this, the menu is somewhat eclectic and personal, and food-focused. But that was exactly what we wanted, so it was great for us.
