For several months I have followed with relish and desire the culinary creations of Loïck Tonnoire in Marseille, first at Figure then at Ippon.
This lunch, at Ippon, was magical, as a starter we opted for green asparagus, tarama, white butter. The asparagus was delicate, the taramasalata divine and I had chosen a wonderful orange wine (Garde la peach from François Ducrot) to accompany it all. Then, tasting the sirloin flank steak, maître d’hôtel butter, anchovies and spring onions was a pure delight. For dessert I was tempted by strawberries from Provence and their whipped cream as light as a cloud.
In addition to Loïck's cuisine which is sublime, the strength of Ippon is Louise's welcome, attention and sense of hospitality which delighted us. From the moment we arrived, she put us at ease, her service is impeccable and ultra-friendly, it is an essential and inseparable dimension of the culinary experience and at Ippon, everything makes the moment wonderful.
Besides, when we returned from Rome on Saturday evening, we were lucky that a place for two was free and we came back to Ippon for dinner. The place is the same, but the sensations are even more intense and beautiful. We were seated in front of Loïck and Marie's workspace and watching them prepare and arrange the different shipments was simply brilliant.
To accompany our dinner, Louise recommended a mineral and complex white wine Nothing is at random from Domaine Mann which won us over.
During our dinner, we tasted old Comté asparagus full of flavor, perfectly tender slices of fish and above all, the dish I had been dreaming of for weeks on Loïck's insta account: his lacquered sweetbreads and, I'm going to weigh my words, it was a pure taste orgasm. The sweetbreads were wonderfully tender on the inside and slightly crispy on the outside and I admit that I have very rarely felt this kind of sensation when I eat a dish but here, I had a blast! For dessert, a soft strawberry financier landed us gently.
If you want to have a great culinary experience, meet passionate and lovely people and discover an excellent restaurant in Marseille, go to Ippon! It's guaranteed to be fun
