Bagnard is located in the food hall of Galeries Lafayette Paris Haussmann, where the Parisian hustle and bustle mingles with the buzz of hungry shoppers and curious tourists. Not a classic restaurant, but a culinary stop nonetheless: informal, lively, and unpretentious. For lunch, we both choose the Salade Niçoise, a dish that can be merciless in its simplicity. Here, however, there is no minimalist interpretation, but rather a generous, almost exuberant plate. Tuna, anchovies, egg, crisp vegetables, and olives are not so much arranged in an orderly fashion, but rather generously arranged next to and on top of one another. It is a plate that convinces through its abundance, without descending into sloppiness. The flavors are spot on: fresh where necessary, salty and savory where possible. Not a revolutionary take, but a correct and tasty execution that shows respect for the classic without trying to prove itself. The service is remarkably friendly and spontaneous, a rarity in an environment that often tends towards haste and anonymity. There are no stiff formalities here, but rather a warm, accessible approach that fits the setting perfectly. The atmosphere is relaxed and unforced. People do not come here to dine for hours, but to catch their breath between shopping trips, with solid food and no pretension. With that, Bagnard is exactly what it should be: a pleasant stopover in a bustling environment, where simplicity and quality go hand in hand. Not a destination in itself, but certainly a place where people enjoy lingering for a while.
