21/08/2025: Ha. The "big" menu offers three starters. No, it's not one of the three, it's all three one after the other! Cautiously, I settle for the "small" menu, with a single starter.
As soon as the aperitif begins, the color is set... The owners take a good ten magnums of kir out of the fridge, with new flavors: chestnut, mandarin, vine peach, morello cherry... "Oh, by the way, you can come back for more if you want to try several!" Are you kidding? No. It's practically unlimited. The syrups are, of course, homemade, as are the little cakes that accompany them. The ensemble is perfect.
The starter arrives: eggs cocotte with summer truffle. Two eggs, crème fraîche, a generous amount of truffle slices. The combination is fantastic! I'm already feeling less hungry...
Beef with guigne sauce: the meat is of superior quality, accompanied by a breaded eggplant purée ball, a slice of grilled eggplant, and a potato wrapped in a thin slice of bacon.
Let's move on to the cheese: it's not a measly piece of cheese in the middle of a plate, but a whole platter, a dozen local cheeses, all you can eat once again. I skip it; I'm starting to feel more than satisfied.
Dessert is an assortment of three chocolates (Mexican, Guatemalan, and?), in the form of a sorbet, a mousse, and a fondant. The chocolate-sugar balance is perfect!
The icing on the cake: the owner offers us a digestif, a frosted pear. All you can eat once again.
The setting is superb; there are only four or five tables on the terrace, so you can't hear any conversations. The service is provided by the owner himself, with great good humor.
For around €40 per person, including wine, the die is cast.
The next time I'm in Ariège, I know where to eat without hesitation. I recommend it 200%. It's a shame Nancy and Sieuras are so far apart... I'll be there often.
