A very nice address in Ajaccio! We loved everything, the quality of service with very pleasant and professional staff who had perfect knowledge of the dishes, a magnificent location by the sea under a pine tree, no waiting, the dishes arrived hot and perfectly seasoned.
Bonus on the vanilla ice cream of remarkable quality, it was the best of our 15 days in southern Corsica after many comparisons.
To love beautiful tables, we will come back with great pleasure.
The value for money is equivalent to the quality of the products and this exceptional place.

Nous avions un très bon souvenir, il y a cela trois ans.
Aujourd'hui la qualité de l'assiette est restée correcte mais le service en salle à l'exception du Maitre d'hotel aurait besoin d'une très forte reprise en main pour etre au niveau d'un restaurant de luxe.
Quelques verbatim "je vous apporte l'apéro" "je retire le sel et le poivre après les hors d'oeuvres?"
Quelques vécus : les coupes de champagne qui ne sont pas retirées vides, les piques olives de l'apéritif qui restent sur la table pendant tout le repas.
L'équipe est jeune et visiblement en formation voire en initiation c'est compréhensible a petite dose mais pas pour l'ensemble d'une brigade de salle.

The terrace is undoubtedly the least good of the Sanguinaires. The service is excellent, the cuisine is average. A very bad experience in Ajaccio. The Route des Sanguinaires offers other very superior addresses at a much lower price.

Sometimes a story is being told with a menu and one can feel elevated by a culinary experience. That's not what happened to me tonight. Starting with a sea bass carpaccio (loup de mer), adorned with caramelized popcorn a sour/sweet sauce. Being an afficionado of sashimi, I was left with the sour taste from an obvious lack of inspiration.
As for the "sauté de veau" a veil filet with toasted green olives, roasted potatoes (peeled thin, layered and then roasted or fried), the meat was the decent, but not really the experience I'm used to from haute (french) cuisine.
A lot of the experience is about the setting, but it's hard to enjoy the view without being at one of the 3 (out of 20) tables by the fence by the sea. Otherwise it's not giving much of a view, given the alternatives available all along the shore in this area of the Ajaccio gulf.
We didn't bother with desert

We enjoyed a romantic dinner here on our first night in Ajaccio, and it was perfect!! Every bite was delicious, but the star of the meal for me was the plate of locally sourced cheeses. I woke up the next morning dreaming of that cheese! The service was perfect, and the ambiance was so tranquille. We watched the sunset over the port, and after dark, the terrace was lit with string lights in the gorgeous tree overhead. Have a capo spritz with your amuse bouche and relax :)
