A superb discovery thanks to a friend's recommendation.
A complete coincidence: we arrived on the very day of the Bergues Carnival.
Even though the restaurant was full of people in costume, it didn't dampen the atmosphere. No intrusive singing and a contagious good cheer.
From start to finish, the meal was excellent.
Sweetbreads as a starter, cooked to perfection.
Excellent squab as a main course.
Refined cuisine with a quality wine pairing.
Unbeatable value for money, something we Belgians can only envy (set menus at €36 and €46).
This address is now at the top of our list near La Panne (a half-hour drive).

From start to finish, the meal was a feast for both the palate and the eyes!
While, for once, there was no calf's head on the menu, the tongue with gribiche sauce was a superb substitute! The chuck roast was meltingly tender with small croquettes, flavorful cheeses, and a generous slice of buttered galette.
The service was friendly, efficient, and very attentive.

The service was very pleasant and the staff attentive; we have no complaints about the welcome. However, we were disappointed by the value for money. For a €45 menu, we expected a more refined culinary experience.
Furthermore, our lunchtime visit coincided with the carnival, which created a very festive and noisy atmosphere. This might appeal to some, but for a restaurant of this caliber, we would have appreciated being informed in advance so we knew what to expect.
Finally, the €16 food and drink pairing supplement did not seem to live up to the overall quality of the meal.
In short: very good service, but an overall somewhat disappointing experience considering the price.
