As always, an excellent experience with seasonal cuisine bursting with flavor. The service was pleasant and attentive. One of our guests was vegetarian, and the menu was adapted to their needs with plenty of delicious options.

The Auberge des Aryelets offers cuisine that is both delicate and refined, with floral touches and presentation plates worthy of a Michelin star!
Although the place was recommended to us, my mother and I were delighted to experience the high quality and unpretentious charm of this establishment (the term "auberge" encompasses the restaurant in a small village perched above Guchen!).
We were greeted by a very attentive waiter, who was as consistent as he was meticulous in describing the dishes and always quick to answer questions, not to mention the discreet and benevolent presence of Maya, the house cat!
I will gladly return this summer with my partner!

We were traveling through the Vallée d’Aure with my boyfriend and our dog, and decided to drive all the way to Aulon for lunch at Les Aryelets — and honestly, it turned out to be the best decision of the trip.
We opted for the 5-step tasting menu, and every single course was thoughtful, balanced, and beautifully executed:
The meal started with an amuse-bouche of boudin noir, pickles, mustard, and salicornia. It was absolutely delicious — crispy, flavorful, and perfectly balanced.
Then came the white asparagus from Landes with smoked trout, passion fruit, and lemony cream cheese. The asparagus were cooked to perfection, and the combination of flavors worked incredibly well.
The foie gras (mi-cuit from Ferme de Mourlon) was, without exaggeration, one of the best we’ve had in the region. Paired with onion chutney and a blood orange gel infused with Timut pepper, it was just outstanding.
Next was the grilled tuna with chorizo piperade and a black olive siphon. While everything on the plate was well done, the piperade really stole the show: deeply flavorful, slightly tangy, and with just the right touch of acidity.
The highlight of the meal was without a doubt the Aulon milk-fed lamb. Served as a confit with a crispy pastilla, alongside wild garlic and black garlic plant-based mayonnaise, hummus, roasted pistachios, and butter-glazed vegetables. It was simply exceptional. A real star dish, full of texture and depth.
For dessert, we had dark chocolate with fleur de sel and tonka bean. It was amazing: very intense, not overly sweet, and with a beautiful play on textures.
Beyond the food, the entire experience was fantastic. The service was excellent: warm, attentive, and professional. They also welcomed our Golden Retriever without any issue and even brought him water, which we really appreciated.
The setting is incredibly charming — it feels like a cozy mountain chalet, almost like a cabin in the woods. It adds so much to the overall experience.
We truly loved everything about this place and couldn’t recommend it more. Just make sure to book at least 4–5 days in advance, as it’s almost always fully booked — and for very good reason.

Beautiful place in a stunning setting, very warm welcome, and above all, what cuisine! It's beautiful, delicious, and exquisitely refined! The chef has done a wonderful job, using fresh, seasonal, and local produce. You must go there soon, and definitely come back!
