Auberge du Vert Mont sur Boeschepe

First experience at Vert Mont, and I'm sorry to say we were disappointed. Upon arrival, we waited by the fireplace, which was pleasant, especially after an hour's drive (thanks to Lille's traffic jams!). Then we waited quite a while at our table before getting anything to drink. We found the portions very small. Two of us don't eat pork, and instead we received a tiny portion of mushrooms. For a Michelin-starred restaurant, this is quite surprising and disappointing. Some of the servers were excellent, others rather stressed, which made me feel uncomfortable. We had a lovely time in a superb atmosphere, but I don't think we'll be back. It's a shame; this is the second time I've been disappointed by one of Florent's restaurants (Krevette previously)... and I was such a fan of Bloempot.

Second visit to L’Auberge. Beautiful place, very pleasant atmosphere, perfect decor, impeccable service and welcome. It's a shame the food doesn't live up to expectations. I'm disappointed compared to our previous visit. The portions are so tiny they're almost ridiculous; the fifth time around, a portion of fries with Maroilles cheese finally filled us up. But if I want fries with Maroilles, I go to Berbuik, not Vert Mont. As for the flavors, they were good, but nothing special. The only surprise was the tiny spoonful of meadowsweet ice cream. The ingredients are very good, the dishes are beautiful and appetizing, but I feel like I ate four appetizers and a fry. The price-quality ratio is no longer justified. Regarding the room, everything was perfect. And the breakfast was delicious. We will not return (just like at Bloempot where our experience disappointed us last year because of the coldness of the service and the place and the not really tasty menu) but we still thank the whole team at the hostel who do a great job.

A truly unforgettable experience, with incredibly friendly service and a warm welcome! The complete experience allows you to sample a wide variety of dishes, all prepared with meticulous care. Special mention goes to the alcohol-free experience, where each infusion is expertly crafted and expertly prepared. The presentation is pleasing; what might initially seem light intensifies the flavors when you taste the accompanying dishes! The subdued ambiance in the evening and the spacing between tables are perfect! I highly recommend this establishment.

We had an exceptional time at the Auberge du Vert Mont in Boeschepe. The welcome is warm, genuine, and familial, with a passionate team that truly cares to make the experience unforgettable. Each dish is a culinary discovery, both delicate and full of character. The flavor combinations, the use of seasonal produce, and the highlighting of local ingredients demonstrate great expertise and genuine culinary creativity. The service is attentive, friendly, and professional, while maintaining a charming simplicity that puts you at ease. You truly feel at home, but in an exceptional setting.

Incredible culinary experience. Cuisine that fully reflects the chef's values. Here, there's no chocolate or coffee (the chef preferred local chicory), only local produce. It's surprising and breaks the "bourgeois" codes and habits seen in other places. There's a real coherence and logic in the sequence of dishes. One small drawback: the wine pairing with alcohol is... confusing (especially the Arbois wine). I preferred the non-alcoholic wine pairing, which had some really nice surprises. Otherwise, the setting is magnificent; we'll have to come back every season to see how the view changes. As a bonus, we had the honor of being served a dish by the chef himself. In short, a truly wonderful discovery (even the revisited Maroilles fries).

We had a wonderful stay as a couple at the Auberge du Vert Mont. The setting, in the heart of the Flanders Mountains, is peaceful and charming. Florent Ladeyn's cuisine is exceptional: local, creative, and full of flavor. The blind menu was a wonderful experience, original and refined. We also really enjoyed the hotel: comfortable room, warm decor, and attentive service. A place to recommend without hesitation for a romantic weekend combining gastronomy, nature, and relaxation.
