It’s a small shop. The fried dumplings are super greasy, and the ramen is very salty and has a Japanese taste. I thought Japanese food would come with ice water like in Japan, but without water, I felt tired after eating it.

There was a line, but service was super great and everything moved very quickly. I personally didn’t like the style of noodles and it’s unfair to compare to Japan.

Good address in the heart of the Châtelet les Halles district, be careful it's not very big so there is often a bit of a wait to get a table. We discovered Ramens, this Japanese dish made from pork broth and noodles, garnished with eggs, meats and other condiments... a very nice discovery. The dishes are very good for a reasonable price and the service is rather quick.

Small intimate eatery amongst all the other bigger establishments in that area. The waitress who served us were friendly. The chef behind the kitchen, looks a bit grumpy, or maybe just tired due to the warm weather. It’s a sin to fly all the way to Paris and yet skip french food. But their Tonkutsu Noir with chasu + scorched garlic sauce is so tasty and flavorful, I willingly sinned and vow to never repent.

I've been to many Ramen restaurants around the world, and this has one a spot in my top 3. The rich, thick tonkotsu broth was absolutely perfect, the noodles were wonderfully thin and held the broth well, and the chashu pork topping was wonderfully tender. They serve the perfect bowl of Tonkotsu Ramen. For those who aren't too into Ramen, my partner had their Chasu rice bowl and enjoyed it very much.

I was absolutely won over by the experience. The ramen is exquisite in flavor, with rich broths and premium ingredients. Every dish I tasted was perfectly balanced and delicious. The service was also exceptional, with staff being very welcoming, courteous and attentive. I highly recommend this place to all ramen lovers, and I will definitely come back!

Prices have increased a lot. 21-22€ if you take the meat and the egg. It's more expensive than other ramen restaurants which are more like 17-20€. The advantage with hakata choten is that you can choose the cooking of the noodles (normal, al dente, firm) and the concentration of the broth (light, normal, concentrated). Since I haven't been here for a long time, I forgot to ask. And I had by default the al teeth and concentrate. I recommend al dente, because afterward it softens. The concentrate is REALLY concentrated. Never seen such a thick broth. It's too salty. 😅 But it tastes good. I recommend light or normal broth instead. The meat is super tender. It melts in the mouth and is delicious. The egg is almost soft. But satisfying. For the quantity it is plentiful. We are very full. Well, I'm a small eater and I almost didn't manage to finish (I managed after a break). For average eaters you will be well catered for. Conclusion it is more than correct. But it's not worth the price.

26/08/2024: Le service est très agréable et la nourriture est délicieuse. Nouos y sommes allés deux fois, tout à l'air bon, nous avons testé les sashimis, les sushi et le chirashi. Le chef propose des sushis et plats de poisson de très bonne qualité pour un prix abordable. On s'en sort pour 20 à 30 euros/personne. Le poisson cru est de très bonne qualité, les desserts sont très bons aussi (mention spéciale pour les mochi sakura maison). La salle du bas est un peu petite, mais agréable, il faut réserver pour le bar (et aussi si vous êtes très nombreux car il y a peu de couverts). Une adresse qui vaut le coup pour manger de vrais sushis !
