We arrived at this place by chance… and it was just what we needed!!! The rolls are delicious, it's casual and relaxed, the service is super good! A super pleasant surprise.

High-end Japanese street food (handrolls)
With Kaito, we are in the atmosphere of the small stalls of Tokyo where we eat on the go.
A small boutique on rue de Seine with a beautiful and sober white front. Inside, we discover a beautiful blue marble bar and a few high tables. Opened a year ago, Kaito initially offered to eat standing up, Tokyo style, but the French like to take their time at lunch ;-), and they finally installed stools.
Kaito offers handrolls, rolls of seaweed sheets with rice, maki style, but not cut up. They roll them to order, so that the seaweed sheet does not soak up the water from the rice and remains crunchy. The rice is at the level of sushi masters, and the fish are quality and matured for several hours. Chef Takuya 'Taku' Watanabe works at the Michelin-starred Taku Mayfair restaurant in London. So street food, certainly, but a high-end version ;-)
You can take a formula with miso soup, salad and 3 rolls for 24 Euros (4 rolls 31 Euros, 5 rolls 40 Euros), but you cannot choose the rolls.
I was completely unreasonable, and I took the rolls à la carte. After the fresh and crunchy Kyuri Wakame-su salad (cucumber and seaweed), I try the gobo roll (a kind of salsifi with an artichoke flavor), then the roll of the day salmon, crispy skin (grilled salmon skin), avocado , takuwan (marinated daikon/radish), my favorite, the excellent Kaito roll (fat red tuna), and a 4th roll, sea bream and yuzukosho (yuzu chili paste), with a very nice pep. All were excellent! The service is super friendly, knowledgeable and dynamic.
With a matcha cheesecake, a Geinmacha tea and a sake, the bill is not streety at all (85 Euros), but only my greed is to blame, you can eat very well at Kaito for 24 Euros! It's crowded, so get there early if you want to get a seat.

Superb Japanese from the rue de Seine lunch menu 4 rolls! Salmon, crab, sea bream and otoro really superb!
