We had the chance to discover the chef's cuisine through the Omakase menu which leaves us with sweet memories... The service was impeccable, and the dishes followed one after the other in a ballet of flavors reminiscent of authenticity and Japanese know-how. Special mention for the fried oyster on its exceptional tartar sauce, as well as for the blue crab sushi (a magnificent discovery!), and finally the poached egg with sea urchin tongue and salmon roe which burst into mouthfeel and give the dish a tremendous iodized power. Without forgetting the candied eggplant that melts on the tongue enhanced by dried bonito flakes (the famous katsuobushi), which give the whole thing an incredible umami note. Thank you again for this delicious experience. It was a real trip, we were enchanted.
