Ah, how long ago it seems that this restaurant was truly worth the detour… Certainly, the setting remains magnificent with its breathtaking view of the Gruissan salt marshes, but alas, the flavor of the dishes seems to have evaporated.
Let's start with the positive: the sea bream, cooked to perfection, was a real delight. The seafood platter, accompanied by its aioli sauce, was also excellent.
Now for the less-than-savory part: the duck breast in a salt crust. Dry as a desert and as difficult to eat as shoe leather, our dogs, however, devoured it. At least someone was happy!
As for the side dishes, the tricolor rice was very good, but the mashed potatoes with olives were sorely lacking in flavor. And the children's menu, with its oily pasta, didn't exactly contribute to our family's satisfaction.
Back to the positives with the desserts: the ice cream was delicious, but our enthusiasm quickly waned when they forgot to serve us the dessert from the children's menu. A child without dessert is a bit like a clown without a red nose.
The low point of our experience? The cashier, more engrossed in her voicemail messages than in our pain. Perhaps she was expecting culinary advice over the phone?
In conclusion, this restaurant is no longer worth the trip.

Cassoulet no longer available... yet at 1 p.m.
The other dishes (chicken and fries, duck leg, oysters, etc.) were very mediocre. It's a shame because the place is nice. They could really do better in terms of quality and quantity.

The food is okay, although a little too greasy and oily, but the service beats all records! I never think I waited around 2 hours for the main course. To say: there were 3 of us and we arrived at 12:30 p.m., the time we had reserved a table. We left the restaurant at around 4 a.m....!

We had been looking forward to this restaurant. Recommended by friends. Pleasenly overlooking the salt pan. We booked for Monday lunch. It was already quite busy when we arrived. We were quickly seated, given menus. The waiting staff appeared well organized and friendly.
Our order was taken. I ate a couple of starters. The Oysters were gorgeous and quite salty. The moules in chorizo were OK, I would have expected a more fried Chorizo though.
I was rather disappointed with the Cassoulet. Yes it's a dish that can be prepared before and reheated to serve. The Cassoulet had all the ingredients, I expected a deeper thick sauce and not such a watery sauce. Some of the ingredients were a bit on the cool side, the sausage in the Cassoulet had definitely not been heated through.
My wife found her main couse of chicken encased in salt, not to be encrusted in salt and its texture suggested it was reheated from the day before.

Exceptional place with equally delicious meals, and extremely attentive and professional staff...
Unfortunately, we had to leave the table before continuing to eat because I'm allergic to mosquitoes, which can lead to edema from Quick's... And I should have thought of that in the evening next to the salt marshes... of course, the mosquitoes are there... But they immediately offered to take our meal away and gave us free drinks. Highly recommended, everything was great, we just missed dessert...
