Every time I travel to the provinces, I stop by this butcher shop to bring back meat to Paris, and of course, the best tripe. Often award-winning, it's excellent and you won't find it anywhere else.
Top-notch staff, quality meat, they listen to advice, never disappointed by the quality of the meat, the tripe, their sausages which are flavorful and not too fatty, and their tripe—sure, you pay the price, but you know what you're eating. I highly recommend it, and especially their calf's liver—it's amazing!
