12/03/2024: The dairy, a Lambersartoise institution that I had the pleasure of rediscovering on this gourmet evening of November 18. I will remember several things from this long taste parenthesis: first of all, an extreme pleasure on the plate, for my part on the basis of the very exhaustive land/sea menu, then a downside, that of the Alba truffle supplement, of which the diaphanous slices came to envelop my already delicate scallop, and whose added value seems to me to be slightly usurped given its price (+20€...It's still almost the price of a good entrecote and fries ®) But in the end, a fairly exceptional customer experience (even if the atmosphere of the bar side room is a little cold with a lack of light which must be corrected) with a very interactive team, an invitation to visit the kitchens, the brigade and - highlight of the show - of the restaurant's cellar, especially a clear (and not feigned) sympathy from chef Edouard Chouteau, an undeniable talent and "future great" announced by Gault et Millau, with all due respect... if I note: on the plate: 8.75/10 - for me it is in the star. Obviously, here we can't talk about price because at €650 the bill for three guests you don't come with a pinch on your wallet 😉
08/03/2024: As always perfect. A huge pleasure as much by the atmosphere, as by the flavors and the friendliness of the staff, as well as by the pleasant but non-invasive presence and full of passion and skill of chef Edouard. A restaurant that has finally become one of the best in the region again, easily deserving to finally regain its star!
