The cooking is done on site and that changes everything! The plates are nicely garnished, from starter to dessert.
The flavors are balanced. Plays of textures are present on the plate, between crunchy, melting, crunchy, crispy and soft.
I would have added a touch of acidity to the salmon as a starter. But, everything was already very tasty and tasty. Special mention for the 7 hour pork which delighted me with every bite.
There were four of us and everyone ate more than well.
The room is beautiful, it is neither too hot nor too cold.
Finally, compliments to the boss in the kitchen and to the boss in the dining room, it’s faultless.

Honestly one of the best restaurants around Troyes, especially the 7am pork, the establishment's specialty. Even on work days, a 15-minute detour to get there is no problem.
At the top as usual. 7am pig to taste obligatorily. You can even add your cassoulet which is very good. A dish that is too rarely found in restaurants.
