So, kudos to the chef and his team, to the woman who tends the vegetable garden and ensures such high-quality cuisine, and kudos to the baker because the sourdough bread is simply divine and so rare in restaurants. The only downside is that you sometimes have to wait a long time for your food, and you're often turned away because it's too full and there are no more seats. In recent years, they were only open four days a week and often closed for holidays. I highly recommend booking by phone in advance; otherwise, it's difficult to get a chance to eat these delicious dishes. It's the best restaurant in Troyes, and I highly recommend everyone try their food!

The portions were very generous, the atmosphere pleasant, and the staff very friendly. I was even able to take my dessert, a plum tart, home with me because I was too full after the starter and main course. And I must say, the tart was delicious; I don't regret asking if I could take it home 😊 The chef even came to check on us to see if everything was alright. The andouillette was heavily over salted and more akin to eating intestine (which I have). Even the crème brûlée was under brûléed and not firm enough. Glass of Cote du Rhone- not great. Stick to the burgers. Probably safer.
