Excellent restaurant, very pleasant setting for a dinner for two.

Fantastic “haute cuisine” restaurant! We had lunch and it was incredibly good!

A long and gentle stroll through the Loire Valley garden of your restaurant. I didn't necessarily find what had initially drawn me there (the fish aging and vegetable fermentation), but it allowed me to discover a humble cuisine that reveals, without artifice or pretense, the exceptional quality of the ingredients, demonstrating the team's precise knowledge. The lightness and subtlety of the dishes are appealingly delicate, such as the tuna jus with red wine or the chili sorbet. However, this gentleness sometimes resulted in a lack of depth or character, particularly when the saltiness was overlooked (tuna) or the acidity of the vegetables overpowered the dish (horse mackerel). The desserts, executed with great precision, round off a menu with perfectly coherent offerings, but which, in my opinion, sometimes fell short of their potential. A slight regret at not having had the opportunity to interact with the rather distant and abrupt staff, but I would be delighted to return another time for that very reason!
