Everything is perfect at this restaurant.
The seven-course menu, plus five exquisite amuse-bouches, a light and refreshing pre-dessert, and at least two "post-desserts" (it's hard to keep track after a while): as one of the waiters pointed out, "The chef is generous."
The cuisine is refined and full of flavor. A true journey between Burgundy and Provence.
The service is excellent; the entire staff is incredibly attentive to the guests, creating a friendly atmosphere that encourages conversation.
The terrace is very pleasant.
The chef makes the rounds of the tables at the end of the evening.

A remarkable experience, of a rare caliber for a single Michelin star. The other starred restaurants in the Alpes-de-Haute-Provence region should take note immediately.
An extraordinary, competent, and attentive team. The only slight drawback: a sommelier who readily steered us towards expensive bottles and whose approach could be warmer.
This in no way detracted from our enjoyment or our desire to return very soon.

A huge thank you to Chef Louis Gachet and Pauline for welcoming us and taking us on a culinary journey with their refined and daring cuisine, blending their Burgundian roots with Provençal ingredients. Surprises, exquisite tableware, originality, and thoughtful touches throughout this seven-course meal made the experience truly magical! Hats off to the team (head waiters, waitresses, waiters, and Ricardo the sommelier) who are extremely professional, friendly, and welcoming... all within the exceptional setting of the former Minims convent. We will definitely be back!
