A Timeless Interlude
There are restaurants where everything is perfect. The tables are immaculate, the garden meticulously maintained, the decor thoughtfully designed down to the smallest detail.
And then there are places like Le Garde Manger.
A place that doesn't try to impress. A place that lives. A place that feels more like the workshop of a passionate artisan than a conventional restaurant.
At Éric Dupuy's, you quickly understand that the essence lies elsewhere.
In his garden where the flowers that will end up on the plates grow. In the vegetables he patiently ferments. In his caramelized onions, his dandelion honey, his foraging, and all those invisible little preparations that require days, sometimes weeks, of work.
What struck me wasn't just the quality of the dishes. It was the emotion they evoked.
A simple eggplant omelet becomes a journey. A fermented beetroot tells a story. Each bite brings a surprise, a balance, a depth rarely encountered.
You immediately sense that nothing here is meant to impress. Everything is there to please, to convey something.
And perhaps that's what makes this cuisine so moving.
You leave with the feeling of having met not only an excellent chef, but above all, a man consumed by his passion, who dedicates his time to creating, experimenting, cultivating, and sharing.
A few days later, I wouldn't be able to describe the table or the decor in detail. However, I still remember the flavors.

La Garde-Manger is a French fairytale. High on the mountain in a small village where cars are not allowed, sits a small restaurant where Chef Eric cooks and serves. He makes up one tasty dish after another, garnished with herbs and flowers from the garden. Eric pours delicious wine and makes jokes at the table, while you can hear the next dish mysteriously simmering in the background. We had a wonderful meal and would recommend everyone to visit Eric.

Arriving unexpectedly in Chaudière during a hiking trip, we contacted Le Garde-Manger on a whim.
The owner was kind and accommodating, welcoming us that very evening.
What a wonderful discovery!
A discreet, cozy place, with an open and inquisitive owner who clearly has a genuine passion for his cooking.
He quickly inquired about our tastes and preferences, helping us choose between two wines.
The rest of the meal was a feast for both the eyes and the palate. Refined, colorful dishes made with fresh, local ingredients.
A well-balanced marriage of flavors and textures, with the surprising and delightful addition of edible flowers.
From the appetizer to the dessert, including a lamb and vegetable dish, we had a truly excellent time.
Don't go there if you're looking for a quick bite or are constantly watching the clock. Put away your smartphone and schedule, sit back, and let the pleasure wash over you.
A timeless and extraordinary moment, just for you.
We'll gladly return.

A truly unique place and an incredible memory of the meal. The creativity in preparing a vegetarian menu request exceeded all my expectations. There are some truly extraordinary places out there.
