16/05/2026: We arrived just a little too late for lunch, but the owner/chef of **Le Bœuf Chantant** welcomed us with a smile and prepared a **beef tartare (200 g)** especially for us. That flexibility and hospitality alone makes this place special. The tartare could be **customized entirely to your own taste**, with all ingredients served separately. The meat was super fresh, had a perfect texture, and clearly came from a real artisan butcher. A pure, classic tartare like you only find in France. We ate outside in the sun, accompanied by a delicious glass of rosé, and enjoyed the quiet atmosphere of Saint-Paul-lez-Durance.
