From the moment you sit down, the attention to detail is obvious, starting with the rustic, crusty artisanal bread that arrives at the table—which is absolutely essential for soaking up every last bit of sauce later on. I was immediately impressed by the delicate, savory amuse-bouche rolls that arrived first, perfectly priming the palate for the main event with their light texture and fresh herb garnish. Now, the real star of the show is the squid carbonara, which is an absolute revelation that will make you rethink every standard pasta dish you’ve ever had. By swapping out traditional grains for incredibly tender, dark ribbons of squid that mimic the texture of tagliatelle, they’ve created a dish that is smoky, salty, and decadently creamy while remaining surprisingly light and oceanic. The way those "noodles" soak up the velvety sauce, topped with fine slices of salt-cured ham and fresh greens, is pure culinary genius.
