L'Émulsion is a gourmet restaurant that excels in creating dishes that are each more delicious than the last, and it's incredibly creative. The fish dishes are remarkable, and the "soft" option, replacing the traditional wine pairing, is perfect. The service is creative; the kitchen staff even brings the dishes to us. Absolutely fantastic. The service, the quality of the cuisine—everything is meticulously planned, down to the smallest detail— It's truly sublime. The setting is magnificent too. The wine pairings are very precise, and the non-alcoholic pairings are absolutely exceptional. I admire this chef's work; I go there regularly and can see how his cuisine evolves alongside him. There's no menu: the chef creates his own set menu, adapting it to each guest's allergies. In short, an absolutely incredible restaurant in every respect. Highly recommended!
