Each dish has been thought out down to the smallest detail, highlighting local products enhanced by original and tasty preparations. 💖 The oxtail broth around the carp opened the ball with comforting flavors, a real nod to tradition revisited with elegance. 🍲 The Jerusalem artichoke from the Potager, accompanied by truffle and delicate pickles, offered a perfect harmony between crunchiness and creaminess. 🥔✨ Mushrooms from the Island of Nantes, enhanced by a local chicken egg yolk, revealed a subtle balance between earthiness and deliciousness. 🍄🐓 The Loire Catfish, all in finesse, and its accompaniment of leek made us rediscover this local fish in a modern and refined preparation. 🐟🌱 The Ikejime Loire Pike, served with spinach and fresh herbs, surprised with its perfect cooking and delicate vegetable flavors. 🎣🍃 The Petit-Mars Wagyu Beef, the true centerpiece of the meal, melted in the mouth, enhanced by the sweetness of the quince and the subtle heat of the chestnut. 🥩🍁 For dessert, the Rigolette Nantaise, a tribute to this emblematic confectionery, with pear and sorrel, enchanted our palates with its freshness and audacity. 🍐🍬 La Pomme du Verger Lechat, an unexpected marriage of cider and buckwheat, closed this meal on a note that was both rustic and elegant. 🍏🌾 The attention to detail, from the selection of ingredients to the impeccable service, was simply remarkable. De la créativité à tous les étages et un Jeune Chef, très promoteur, entouré de son Dreem Teem.Une belle cuisine haute en couleurs et en saveurs, avec des propositions très originales, exécutées avec maestria et audace, tout en respectant les codes de la Grande Cuisine Académique. Mention plus que spécial et spatiale pour l'accueil, avec l'empreinte très élégante et très glamour d'Anne-Charlotte Perou, Directrice de salle, et la sœur et associée du Chef. On comprend à présent, pourquoi elle a été distinguée par un prix spécial, décerné par un grand guide.... Un service très agréable, très avenant, sobre et des sommeliers très Pros qui savent faire et qui assurent. Une cuisine à la fois, encyclopédique et philosophique qui aborde beaucoup de sujets et des domaines de la connaissance culinaire et du terroir, en général. 05/09/2024: Once again, a great time spent in this restaurant. Discovered by chance on the fork exactly a year ago when I arrived in Nantes, I had the opportunity to eat there again last night. Always a treat for the taste buds. Healthy, fresh, homemade dishes. A more than warm staff. I intend to talk about you and come back very quickly. Thank you!
05/07/2024: We stopped as we saw the signs with the menus and the goos rating on Google maps. The menu was diverse enough and good prices, especially lunch. Service was nice.
