Superb crêpes and galettes, we always enjoy them so much. I pick them up piping hot, straight from the bakery, even better when I get home. I get out the pans, butter, heather, ham, and eggs. I slice some mushrooms and shallots in a pan with some bacon, browning everything nicely. I prepare my plates: a small salad with lettuce, thinly sliced tomatoes, and corn, dressed with a little vinaigrette. I take out the crêpe pan, heat it up a bit, add the butter, then the galette, heather, and egg. I let it melt a little, then add the ham on top, a little of my mushroom, shallot, and bacon mixture. I fold it all up, and there you have it, ready to serve, a delicious, complete Breton galette with a little salad. Enjoy!

These pancakes remind me of my grandmother's. The taste is exceptional, and they hold their shape fantastically when cooked. My taste buds are delighted, and the memory of my grandmother is revived.
