Excellent pizzas with thin, crispy crusts. The dough is homemade with a traditional flour that gives the true taste of Italian pizzas, not the mass-produced kind made in chains with double-0 flour, T44, or T55. Here, the owner loves his craft as a pizza maker and chooses fresh, never-frozen ingredients. He's been in Carcans for 12 years, and it's easy to see why his business is thriving. There are only 15 pizzas on the menu, but they're made with love. Good background music. Pleasant setting, comfortable banquettes, intimate and friendly atmosphere. The owner's wife is just as cheerful as her husband's husband. I highly recommend it.
