A pure delight, Sautier in Trouville! The freshness of the fish is impeccable; every bite breathes the sea and showcases the chef's mastery of the product. The warm welcome gives this place a rare charm: a smiling, attentive team who love their work, and it shows. Special mention goes to the fish offered as carpaccio and fillet: a true delight, perfectly balanced, subtle, and flawlessly executed. The welcome was fine. Once seated, the owner moved to a nearby table with his cigar. The quality isn't what it used to be. The langoustines, in particular, were frozen. A shame.

Pricing is based on the flag that hangs on the wall of this shop. A dozen Fine de Claire No2 oysters for 20 euros (price in the photo) turns into 30 (photo of the receipt), a dozen Cristal oysters for 28 euros turns into 38 euros. In the neighboring establishments in this market they charge 20% of the indicated price for opening and cooking.

I had one dish of Paella. And it was good friendly service and not too long. The Seafood was very good. The paella could use more rice for 25 euros. And the seafood amount was good.
