24/04/2026: Next to La Quille is Paupiette!
A small restaurant with only about twenty seats, so you have to make a reservation as the kitchen is small and seating is limited. I arrived without prior notice, and I say this because the welcome was nonetheless intelligent and warm. I completely let myself be guided and asked the waiter to choose for me, without knowing what would end up on my plate.
The starter was a delightful surprise: crisp asparagus, an airy lemon foam, roasted cashews, and fresh mint. Obviously, it's the season, but what a creative way to prepare these asparagus, truly exquisite!
Then the waiter sensed my vegetarian preferences: wild garlic spaetzle, a delicately velvety pea sauce, and perfectly caramelized roasted vegetables. The wild garlic, the quintessential seasonal ingredient, infuses the entire dish with an irresistible touch of wildness. The portion was generous; I couldn't finish it and was able to take the rest home—a thoughtful gesture.
The dessert was simple yet incredibly effective: a passion fruit meringue tartlet, tangy, melt-in-your-mouth, topped with a perfectly golden meringue. Then, a delicate and flavorful coffee to round off the feast. To drink, a Hopfield non-alcoholic beer that perfectly complemented this inventive cuisine. A true culinary delight.
24/04/2026: A really nice wine bar, quality products, and a fantastic waiter! A pleasant place; I love going there to have a good time!
