We had a wonderful meal at Saint James, sharing a Creole salad and the chicken dish. Everything was delicious, perfectly seasoned, and we discovered a whole range of fruits and flavors! We didn't have enough room for dessert, as the portions were very generous. Thank you for this culinary journey! The staff is very friendly.
We ordered two smoked chickens, but they were pinkish, with no smoky flavor whatsoever. The accompanying sauces didn't enhance the dishes. It's a shame, as the promise of Creole cuisine was met with none of the expected characteristics. The music was pleasant, though. The wait for our food was rather long. Furthermore, the accras (cod fritters) were more coated in flour than filled with cod. As native Caribbeans, this didn't meet our expectations.

We were simply polite; we didn't discuss our meal or anything else during it. If you can't accept criticism, you should reconsider your professional approach. If she is indeed from this island, the prices are still high considering the quality of the ingredients. Have a nice rest of your day.
