At Éric Dupuy's, you quickly understand that the essence lies elsewhere. In his garden where the flowers that will end up on the plates grow. In the vegetables he patiently ferments. In his caramelized onions, his dandelion honey, his foraging, and all those invisible little preparations that require days, sometimes weeks, of work. What struck me wasn't just the quality of the dishes. It was the emotion they evoked. A simple eggplant omelet becomes a journey. A fermented beetroot tells a story.
