We had a wonderful time and enjoyed some excellent food. We loved the discoveries and the atmosphere of the place. Our only slight complaint was the music being a bit loud; otherwise, it was perfect, don't change a thing.

We weren't expecting this.
Two couples, three May birthdays, a road winding its way to Vailhan — 150 souls, a presbytery, and suddenly nothing of the world before.
Gaby opens a door for you. Not the door to a restaurant — the door to her world. A world that she and her team have patiently built since 2018, cultivating the land around the building themselves. What grows there nourishes what is eaten here. No speeches, just the obviousness of a rare coherence.
Raquel Sobral's dishes are bold, without ever trying to impress. They have something sincere, almost vulnerable. You can feel the hands behind them, the choices, the conviction. And all of this ultimately impresses with its delicacy.
And then there are the wines. Gaby Sommellerie, awarded in 2023—and you understand why after just a few minutes of conversation with her. That evening, she directed us to an old white from Terres du Larzac, from an estate we didn't know, which works behind the scenes with a precision and humility that command respect. A pairing that will linger in our memory for a long time.
We left silent and euphoric, to our great delight. Friendship around the table and on the plate. The recipe for shared happiness.
This kind of place isn't manufactured. It's built slowly, with determination and love. Make the detour. Even make the trip. Follow this Milky Way.

A fantastic experience that awakened our senses and taste buds. The staff is lovely and the setting quite exceptional. I highly recommend it for experiencing authentic cuisine and meeting charming people. However, personally, I didn't appreciate the meal dragging on!

An unforgettable and truly original gastronomic experience. Exquisite, creative, flavorful, surprising, and generous dishes followed one another, accompanied by precise explanations and perfectly selected wines. Bravo to the entire team! There was also the exceptional human connection forged during this experience with Gaby Benicio, the head waitress. Her availability, competence, and tact were remarkable! And what composure she displayed when dealing with a customer whose appalling behavior scandalized everyone present, whom she had to dismiss, and who left without paying…

We hadn't been back to the Auberge since Gaby took it over, and we were delighted and had a truly magical experience. The welcome was warm (in true Brazilian style :-)), the view breathtaking, and the meal exceeded our expectations. The presentation of the dishes was as original as it was playful.
As for drinks, we recommend the Caipirinha as an aperitif—the best we've ever had, and our work has given us the opportunity to travel to Brazil quite often. For wine, trust Gaby; she'll know exactly what to pair.
We can't wait to go back.

The starters and main courses were excellent.
However, there was too long a wait between the aperitif and the start of the meal. The practice of serving all tables simultaneously disrupts everyone's pace. A table of two always finishes before the tables of four, resulting in a slow service as everyone has to wait until they've finished before moving on to the next table.

I experienced much more than just lunch at Aponem; it was a truly sensory and emotional journey.
A timeless place, surrounded by nature, where every detail is meticulously considered.
The flavors, the aromas, the presentation, the ambiance… everything is an invitation to travel.
Each dish was a surprise, a work of art, a unique emotion.
A suspended, inspiring moment, beyond reality.
