For the points that could be improved, I would say that the prices are a little high and that the choice of wines by the glass could be a little more extensive (a little more diversity without more volume)... for everything else, the experience was really amazing.
There is both a certain evanescence in the textures of the dishes and a crazy intensity between the acids and the bitters which practically goes to the limit between pleasures and discomfort (while remaining on the palsirs). The sequence of dishes is really very well thought out and it's a real change of scenery while retaining a majority of local products. The moment is truly unique and remarkable and the support from the staff in the room is very pleasant. The team is smiling, considerate and efficient. There is very little waiting between dishes which avoids spending more than 3 hours at the table.
The big question is that with so much originality will a second pass be just as remarkable?
I think I'll take the risk pretty quickly.

We booked last minute and upon calling I was delighted to be asked if we were coming for a special occasion.
The place is simple and elegant, the welcome warm. The table is set tastefully and everything goes smoothly.
A poetic menu that pays homage to the place where the restaurant is located. New flavors and a special place for herbs, a real delicacy with delicacy.
I highly recommend!

One of the best 1-star restaurants we've been to so far, top 3!
The setting is great, a hostel in the countryside to disconnect. The service is impeccable, they are efficient, adorable, simple, really perfect. We priced the largest menu, at €145 and €230 with food and wine pairing. They send an email beforehand so I was able to say everything I didn't eat and they made me a tailor-made menu. Everything was incredible really, a delight. Flavors, good products, research and presentation work are excellent. We ate 12 courses. They gave me a pavlova in a Chritofle egg for my birthday too. My husband loved the wine pairing. Everything was perfect, I liked the bay leaf ice cream a little less and the very tangy crystalline but otherwise faultless. Incredible culinary experience to do absolutely, in a charming medieval village. Special mention to the macalow, a mixture of macaron and marshmallow to die for. A big congratulations to the chef, and to the sous chef who came to present us with many dishes, very appreciable.

A timeless moment in this inn where your gaze turns towards the large fireplace with the vegetables slowly smoking above the embers.
The service was very professional and up to standard, we had all the explanations and necessary follow-up. We even spoke with the person in charge of the room and the head waiter present.
The cuisine is inventive and surprises us with its technical audacity. The tastes and seasonings are also up to par. We had a weakness for the trout topaz and vegetable jelly as well as the pike nut.

We had lunch
For a starred restaurant we were a little disappointed the menu did not transport us. I found the dishes very visually beautiful but not necessarily exceptional in terms of taste apart from the stained glass window which stands out from the rest the rest I found quite flat
Too bad because the chef has a lot of imagination like the diaphanous frog but which taste doesn't transport me. On the other hand, a perfect service as well as the welcome

Menu dégustation faisant la part belle à l’inspiration locale. Plusieurs plats à mentionner à commencer par le brochet aux goûts marqués et harmonieux puis les desserts surprenants, variés, en particulier la glace d’herbes. Service attentionné qui rehausse tout l’ensemble.
Deux bémols néanmoins : un plat principal (rouget) qui n’apporte pas de variété au menu très tourné vers le poisson et qui ne s’insère pas dans la thématique locale du reste du menu; une carte des vins un peu courte.

Salle de restaurant élégante avec un personnel très prévenant. Les plats sont originaux, goûtus, et bien présentés. "Le Vitrail" plat signature est un parfait exemple. Le dessert "le Cristallin" est également d'une grande originalité. De plus, le chef Gregoire est un véritable show man pour certains plats.
Bravo à toute l'équipe
Cela a été une belle découverte et nous avons passé un excellent moment. Nous y retournerons si l'occasion se présente.
