18/09/2023: I had the opportunity to dine at the Imouto restaurant in Lyon a few weeks ago and I was absolutely won over. The restaurant offers French-Japanese fusion cuisine, a daring concept which is nevertheless perfectly successful. I particularly enjoyed the glazed pigeon, served whole with miso yellow carrot puree, shitake pies and crunchy green beans. The pigeon was cooked perfectly and the miso sauce was to die for.
