While passing through Troyes, this restaurant was recommended to us. We ordered andouillette sausage with Chaource sauce and potatoes. It was delicious! Why not offer other sauces, such as a mustard cream or pepper sauce, for this Troyes specialty? The service was prompt, the restrooms were clean—nothing more to complain about!

Lunch in an iconic Troyes location. What a lovely name for a brasserie (La Paix)! It's so nice to hear the word "peace" right now. A typical spot to celebrate my friend's 57th birthday. After a glass of Champagne from the Aube region, followed by sole meunière for one of us, and half a rib of beef for the other with lightly caramelized sautéed potatoes, and finishing with apple tart and homemade flan, not forgetting the coffees, life is simple: friendship, good food, good wine, in a beautiful setting, with a warm welcome—life is good.
