The amuse-bouches were excellent. The dogfish was slightly undercooked. We were seated directly opposite the kitchen and were bothered by the noise, especially by the floor being swept with a broom at 9 pm. That evening, there weren't many customers, and we could have been seated further away. What also bothered me was the waitress with her very long fingernails. She doesn't belong in a restaurant.

Sorry to be so harsh but unfortunately nothing is right: no flavor in the plates, trying to make it complicated doesn't work. By calling your restaurant brut I was expecting simpler and more effective things. There's also no point in giving us the names of the suppliers, for example, the bread which is frankly not great. It's full of good intentions but the result on the plate is not up to par. Service also needs to be reviewed: they don't say "what would you like for an aperitif" but "would an aperitif please you?" Same for the wine: "what wine would you like to drink?"... they don't have any wine. Don't make us feel guilty! Finally, much too expensive for the quantities: main course... 2 tiny pieces of meat tapas style. I can't wait to go back to Gueuleton to have a real experience!
