22/11/2023: The Café de la Mairie, nestled on the Quai Pierre Scize in Lyon, is an ode to the refined simplicity of Lyon cuisine. Upon entering, one is greeted by a setting where past and present meet in a colorful embrace. The bold frescoes, including Marianne revealing a breast with an almost rebellious casualness, rub shoulders with caricatures which inject a teasing and contemporary spirit into the atmosphere.
Here, the cuisine is a return to basics, a reminder that gastronomy is not measured in complexity but in authenticity. The oeuf meurette, a house specialty, is a ballet of flavors enveloped in a red wine sauce, demonstrating a mastery of the culinary art that transcends its apparent simplicity. Cooking sausage, for its part, is a celebration of Lyonnaise charcuterie, a humble dish but executed with a finesse that tickles the palate.
At the Café de la Mairie, each dish is a declaration of love to Lyonnaise cuisine, a cuisine which does not pretend, but which delivers, with disarming honesty, authentic and generous flavors. There we discover an ancient but lively France, vibrant with a modernity which does not deny its roots but embraces them with pride. It is a place where good food and good living meet, where each bite is a journey through time and into the culture of a city proud of its culinary heritage.
