As for the cuisine, the restaurant confidently embraces the flavors of the Auvergne region. The aligot is remarkable: silky texture, perfectly stretchy, generous without being heavy. The truffade has that rustic and indulgent character that is so pleasing—true regional cuisine, prepared with respect. Frankly, you quickly understand why this is considered one of the best aligot and truffade in Vincennes. Finally, the decor is charming and consistent: a pleasant, unpretentious brasserie with that little extra something that makes you want to linger. And behind it all, you can feel the hand of a chef who knows his classics and how to bring them to life: good, comforting Auvergne dishes, well-executed and served with heart.
