But I'll confirm it anyway: this is indeed an exceptional pizzeria, instantly erasing the always unpleasant and interminable experience of the 93 bus—which stops almost right in front of the entrance, as if to apologize. To start, an elite bestseller: the Margherita Pop. Then a pizza for connoisseurs, the Tributo: friarielli pesto, fior di latte, stracciatella from Puglia, anchovies from Armatore, hot pepper powder, and basil. Congratulations to the friendly and knowledgeable Fabio, formerly of Carpaccio at the Royal Monceau, who has elevated the wine list to an exceptional level—particularly the Campania selection, which is still rare in Paris. For convenience, I chose a 2010 Greco di Tufo Vittorio Riserva from Di Meo, whose smoky character and length on the palate are remarkable. More interesting in absolute terms is the Gran Sirique "Animal Spirits" from Joaquin: the ancient Sirica grape variety, thought to be extinct, was rediscovered 20 years ago; it is said to have links with Syrah (ampelographic, not only/vaguely etymological - which would tend to confirm that the etymology "shiraz" is rather fanciful)... 300 bottles per year, dear friends.
