Truly exceptional: a warm welcome, beautiful decor, very pleasant and attentive staff (but not overbearing), and delicious dishes that were as pleasing to the eye as they were to the palate—the fish was cooked to an incredible degree. We were, however, surprised that there was no dessert other than a few petits fours...we opted for the six-course menu, perhaps that explains it...in any case, we were delighted and had a wonderful time. Bravo and a big thank you to Mr. Couillon and his entire team.

Dining at La Marine by Alexandre Couillon is an absolutely exceptional gastronomic experience. It's immediately clear why this restaurant belongs to the very exclusive circle of three-Michelin-starred establishments, placing it among the finest cuisines in the world. From the moment you arrive, a detail sets the tone: you pass by the multi-Michelin-starred chef's open and vibrant kitchen before entering the dining room. A very elegant way of reminding you that everything begins here, at the heart of the work with the ingredients. The dining room is superb, elegant, and contemporary, with a magnificent yet understated decor. The atmosphere is both refined and serene. The welcome is particularly warm, especially from the owners' daughter, who is incredibly kind. In the dining room, Madame Couillon oversees the smooth running of the service with discreet elegance and great precision. On the plate, Alexandre Couillon's cuisine impresses with the precision of the ingredients and the cooking techniques. The scallops, remarkably delicate, are cooked to perfection. The bluefin tuna, too, achieves a perfect texture, revealing the full depth of the product. Each dish showcases the seafood and local vegetables of the island with great finesse. Throughout the menu, the flavors are remarkably pure: nothing is showy, everything is just right, precise, and profoundly delicious. A rare gastronomic experience that reminds us why three Michelin stars distinguish the world's finest restaurants. An exceptional establishment, worth the trip to Noirmoutier in itself.

An impeccable three-Michelin-starred restaurant, resolutely focused on seafood. The dishes are magnificent and imbued with a great deal of artistry... the talent of the chef and the team is undeniable. My only reservation is the somewhat cold dining room with its rather harsh lighting... I think the restaurant would greatly benefit from reworking its lighting design.

From the moment you arrive, the experience begins with a truly original welcome that immediately immerses you in the atmosphere. You instantly sense that you're not in a typical restaurant. Walking past the kitchens to meet the staff is a real bonus: a very pleasant, lively, and authentic moment that adds a wonderful human touch to the experience. Once seated, however, the dining room decor seems rather ordinary and somewhat understated compared to the rest of the experience, which contrasts with the initial impression. As for the food, there's nothing to criticize: the dishes are beautifully presented, with a real attention to detail. The meal is both delicious and generous, which is rare enough in fine dining to warrant mentioning. A particular highlight was the seafood broth and the lobster, absolutely incredible, both for the precision of their flavors and the emotion they evoke. The service is undeniably professional and perfectly executed, but can seem a little impersonal at times. Overall, it's a top-notch gourmet restaurant where you can feel the immense effort and dedication of the entire team. The experience is memorable and well worth having, although personally, I would place it more at the level of an excellent two-star restaurant than a three-star one.

We left the Marine after a lovely breakfast. Last night was a journey, an incredible moment where everything came together harmoniously and, as if by magic, you became part of that marine energy for the duration of the meal. Exceptional service, magnificent tableware. A true work of art on every level!

Our taste buds were in heaven (thanks to the chef and his young team...) 😋👏 5 stars for this 3-star restaurant because here it's all about flavors, surprises, daring touches—in short, we thoroughly enjoyed ourselves. 🍾😃👍 A delightful journey through origins, colors, aromas, flavors, textures... A truly great restaurant! Alexandre Couillon takes us beyond the port... elsewhere... and sometimes quite far away. From here to elsewhere... like a voyage at sea.

Wow. We came for dinner last night for a special occasion, having made a reservation almost a year in advance. Everything was wonderful. From the moment we arrived, with the short film that immediately set the mood, to the decor, everything was meticulously planned. We loved being able to see the chef and his team in the kitchen and greet them before sitting down to eat. The service was incredibly kind (don't change a thing!), always available to answer any questions. Céline and her sommelier spoke passionately about each wine they had selected, which made the experience even more enjoyable. And of course, the food: each dish more beautiful and delicious than the last, perfectly executed. Bravo! Special mention for the sourdough bread—what a joy to taste such incredible bread in a restaurant. To date, this is the most wonderful gastronomic experience we have had at a Michelin-starred restaurant. THANK YOU for this magnificent memory.

La Marine, the new version. What can I say? A completely redesigned space; it feels like we've never been there before! A doorbell, as if we were entering a private club, a short film on a giant screen to set the mood and whet our appetites. Very impressive, we couldn't wait to get to the heart of the matter. That's when we discovered the breathtaking new decor, as if we were in a sea cave, with a carpet depicting dunes! Then began the enchanting ballet of amuse-bouches… the six courses, the desserts (we preferred the first to the second, a matter of taste, no doubt), the petit fours, the homemade bread and brioche, each more exceptional than the last. We lack the words to describe all these flavors, all these harmonies. We were able to appreciate the flavors of the sea and those from Alexandre Couillon's vegetable garden, which blended generously and subtly. Everything was delicious, inventive, and delicate. The presentation extends to the plates themselves. A true spectacle! The service is impeccable. This extraordinary journey to L'Herbaudière, at the very tip of Noirmoutier Island, is a unique experience. Upon leaving, the sleepy harbor contrasts sharply with the warmth and refinement of La Marine – a three-Michelin-starred restaurant, without a doubt.

24/04/2026: We booked a table for 7pm, we arrived 10 minutes in advance and they let us in. We’ve got steak, fish, St Jacques and octopus. The food was good and well prepared but the service was average. I do recommend booking in advance as the restaurant was full after 20 minutes after the opening.

30/04/2026: A superb establishment. The setting, welcome, and professionalism were top-notch. For starters, we enjoyed skate wing salad and fresh pan-fried prawns. The main course was seared fish and a fish fillet with rutabaga. For dessert, a gourmet plate included a brioche French toast (absolutely divine). All accompanied by an excellent red Bourgueil wine. Reservations are essential.
27/04/2026: Fresh products, the starter was generous but a little bland (I couldn't taste the coriander). Otherwise, perfect, I recommend it. Fast and excellent service.
