La Table de Sabine sur Calvi

I had a wonderful time; the staff were very attentive, and the fish was locally caught with a wide selection. We had the tartare, the oysters, and the lobster pasta—everything was perfect. The desserts were just as delicious and beautiful; I highly recommend the mille-feuille!

Some places are discovered by chance, others are earned. This one was whispered to us during a conversation with the owner of Café Colomb, a neighboring establishment. "Live happily today because tomorrow it will be too late." This mantra, engraved from the walls to the ceilings of the legendary Calvi cabaret, was immortalized in 1982 in "La ballade de Chez Tao" by my idol Jacques. We can't thank our kind informant enough. From the moment we arrived, the tone was set. Guillaume embodies elegant service: professional, precise, discreet when necessary, and present when needed. Marie, for her part, provides that genuine attentiveness that makes all the difference between good service and a truly warm welcome. Together, they form a remarkable duo, perfectly in tune with an establishment that cultivates excellence without ever becoming affected. On the plate, the sea bream reaches new heights. Cooked to exemplary precision, its pearly, delicate flesh fully expresses the nobility of this exceptional fish. Each bite reminds us that simplicity is often the most accomplished form of gastronomy when served with impeccable ingredients and perfect mastery. The wine cellar also deserves special mention. The chosen wine proved divine, accompanying the meal with an almost uncanny naturalness, enhancing each flavor without ever trying to steal the show. It's often said that a restaurant is 30% the welcome, 30% the service, 30% the cuisine, and the remaining 10% the magic of the moment. At La Table de Sabine, the magic extends far beyond the restaurant itself. And for me, who has a particular fondness for poetic worlds, there was something that evening of that "eternity of the moment" that Romain Humeau so beautifully captured. A suspended moment, rare and precious. Bravo to the entire team. A truly exceptional restaurant where one comes to dine and dream... and leaves with a lasting memory.

A truly wonderful discovery in Corsica! La Table de Sabine offers authentic, generous, and perfectly executed cuisine, using fresh, local ingredients that really make all the difference. The service is warm and attentive without being intrusive, and you can feel the genuine passion behind every dish. The atmosphere is simple, friendly, and typically Corsican, which makes the experience even more enjoyable. Special mention goes to the quality of the dishes, which were definitely there. We had the catch of the day, and it was delicious! I highly recommend it to anyone looking for a truly local, well-run, and authentic restaurant.

Exceptional setting, welcoming and professional service, and top-quality cuisine and products. It's a veritable feast: the servers parade by with platters of the day's catch and also present the live lobsters and langoustines that the customers have chosen before the chef prepares them. A truly wonderful experience!

Friendly staff. Nice place to sit by the water. They come to show you the fresh fish. Quite pricey though. Tables beautifully set with white tablecloths.
