We had the five-course menu in the evening.
The amuse-bouche was a trio of pickled onions, smoked wild boar, and herbs on moss—nothing particularly stood out.
This was followed by potato mousse with a wonderful consistency and lightness, a very delicate flavor, and a lovely sensory experience thanks to the tiny garlic croutons.
The subsequent pickles—various pickled vegetables—were too acidic for my taste and not a suitable start to the meal.
The catfish from the Rhine with vegetable broth, pine aroma, and radicchio was somewhat bland in flavor and too natural in its aroma.
The main course was a very good cut of beef, accompanied by Jerusalem artichokes prepared in two different textures. Here, too, a bit more flavor would have been desirable.
As preparation for dessert, an interesting "Eau de Plantes" infusion with a medicinal-tasting oil was served. Not sweet.
For dessert, fennel with chocolate—a very tasty combination. The other small desserts were also very successful.
The evening brought surprises with highs and lows; overall, all courses were prepared with great care and effort – however, there remained the feeling that the naturalness of the ingredients was emphasized too much and the aromatics were lacking.

A delightful experience in Alsace with lots of personality and herbal flavors, allowing for a journey of aromas and textures.
I visited in the winter (January) and we had the 5-course menu with wine pairings. Of the 4 glasses, the first two were very pleasing to the palate, the last two fulfilled the concept presented, but they weren't my favorite wines.
I would love to return and explore the menu for the next season and learn more about the restaurant's philosophy! Congratulations!

I don't like leaving negative reviews for small businesses, but when a restaurant sets a premium bar, I think it's fair to hold them to high standard. We had the full tasting menu for dinner, and unfortunately, it was possibly the worst meal that I or my dining companion have had at a Michelin-starred restaurant.
The atmosphere was lovely and the service good, but the actual food left much to be desired. I divide experience into thirds:
1/3 of the dishes were delicious, interesting flavors executed flawlessly. As my companion said of one dish, "this tastes like a happy childhood."
1/3 were interesting, executed adequately but didn't land with us, e.g., some of the overly-seaweedy herbaceous flavors or the bland fish paste served on the back of our hands (without providing towel to ensure our hands were clean).
1/3 were dishes with unforgivable execution failures, e.g., extremely chewy snails or the tough, flavorless boar sausage, the rubbery rabbit that looked like something my cat would leave on my door.
I expect some interesting misses in a tasting menu; that's part of the experience. But I don't expect blatant execution failures at a restaurant with this price point. It wasn't a terrible meal overall, but it was absolutely not worth the premium they charge, in my opinion. I'd consider trying it for lunch, but for a full dinner tasting menu, I do not recommend it.

This is at least my 10th Michelin starred meal and the first one that I will say just wasn’t for me. You need to be very comfortable with organ meat and fishy flavors. Several iterations of boar, rabbit, catfish that came from an over 2 meter fish that had a substantial fat layer under the skin, their signature dish with escargot had an odd texture. Of the 9 courses I thoroughly enjoyed the potato soup and not much else. I think some palates would love but really not suited to mine at all despite considering myself a very experienced fine diner. The meal started with a “bump” of brown fish goop put on your hand using the bits of fish normally thrown away. While I like the spirit of zero waste this was an indication of what was to come. Many curious, different, but not exactly enjoyable courses. Service and vibes great.
