Fabulous place. 1 star. Very good, refined cuisine. I recommend it.

Perfect. Don't hesitate... you won't regret it.

Such a rhythm of seasonal menu updates is a real balancing act. It demands perfect technique, discipline, and mindset, with no guarantee of success. Personally, I applaud it warmly. It's how I learned to understand and respect Japan. For a more objective and professional opinion, you should ask my mentor and friend Philippe Etchebest, Glenn Viel, and Paul Pairet, who dined at Kunihisa Goto and Vanessa Blondeau's restaurant in November 2025. Having visited almost all the Michelin-starred restaurants around Paris over the past few months, I intuitively grasp the level of challenge these establishments face daily. This inspires sympathy, admiration, and, when necessary, compassion. As for the wine list, I won't be as harsh as I was on Village Tomohiro in Marly. I'll sidestep the issue by quoting Gabin in *Le Cave se rebiffe*: "Yeah, well, let's talk about something else, we'd get angry."

I went here with my two daughters for dinner and really enjoyed the food and service. The dining experience was creative and enjoyable. Highly recommend this Michelin star restaurant on your next visit to town.

We recently went to Axel Fontainebleau. The meal was excellent, with interesting flavor combinations that demonstrated some real creativity. This restaurant richly deserves its star and could easily earn a second.

We have been here to celebrate the end of the holiday. And it was absolutely worth it. We had the 5 course meal with the wine menu and we loved every combination. Great sommelier. We loved the fact that there are also working a lot of young people. Good to see that knowledge is passed on.

A magnificent place. We had the immense pleasure of tasting the cuisine of this incredible chef. There was no better occasion than sharing an excellent meal with friends. We absolutely recommend everything. It's superb.

We had the pleasure of dining there as a family and had a wonderful time. The welcome was impeccable, the atmosphere both warm and elegant. The service was thorough, attentive, and flawless. The petit fours served with the aperitif and after dessert were simply exceptional. We chose starters, main courses, and desserts: the portions were perfectly balanced, the temperatures of the dishes were ideal, and the flavor combinations were truly successful. The value for money is 100% justified. As for the wines, needless to say… they were on par with everything else. A marvelous experience from beginning to end. We will definitely return. Thank you to the chefs, the sommelier, and the entire team for this impeccable service.

A truly wonderful experience at Axel. The decor was understated, clean, and minimalist, featuring white and floral accents. The mineral presentation was exquisite. The servers were attentive, professional, and exceptionally pleasant. We made some delightful discoveries with thoughtful and unexpected touches (birthday celebrations, transitions between courses, cocktails served with special aperitifs, etc.). Parking was conveniently located nearby. A memorable evening! An experience not to be missed!
