L'Axel sur Fontainebleau

We had the pleasure of discovering the eight-course tasting menu, an absolutely wonderful experience that lived up to our expectations. The restaurant richly deserves its Michelin star. Chef Kunihisa Goto demonstrates remarkable creativity, imagining flavor combinations that are as surprising as they are harmonious. His cuisine, a fusion of French and Japanese influences, achieves a particularly precise and subtle balance. Each dish offered unexpected pairings, executed with remarkable finesse and precision. I was captivated by every single dish, without exception, both the savory and sweet options. Among the creations that particularly impressed us, the yellowtail with binchotan charcoal and tempura shiso, the delicate triptych of Japanese bread, foie gras, and unagi (Japanese egg), and the onsen egg with peas, bottarga, and Vin Jaune stand out for their incredible execution. And above all, don't miss the smoked lobster with rosemary: a true revelation, delicate, profound, and exceptionally original. A culinary experience difficult to describe, so unique and perfectly balanced are the flavors. The restaurant's elegance is also reflected in the service: impeccable, attentive, warm, and always smiling. A truly wonderful discovery and a gastronomic experience we recommend without hesitation.

Simply exceptional. An initiation into travel in eight courses, with a perfect food and wine pairing. Everything flows seamlessly, like a superb melody, without a single false note. The service is exceptionally refined and attentive, which is extremely appreciated. Chef Goto even takes the time to come to the dining room after service. Truly excellence at every level, and for us, an exceptional and memorable evening.

A wonderful gastronomic experience We had a fantastic experience at L’Axel in Fontainebleau. From the moment we arrived, the welcome was warm and professional, and the service was impeccable throughout the evening. The food was exceptional — beautifully presented, full of delicate and surprising flavours, with every dish carefully thought through. A special thank you to Chef Kunihisa Goto for taking the time to come and speak to us personally. It was a real pleasure to meet him and hear about his passion and approach to the cuisine. And a big thank you to the sommelier for the perfect wine pairings. Each wine complemented its dish beautifully and enhanced the flavours of the food. A truly memorable gastronomic experience, with outstanding food, wonderful service and a lovely atmosphere. L’Axel is definitely a restaurant worth discovering in Fontainebleau.

Five-course menu: A delicate reinterpretation of French cuisine. Japanese beef, melt-in-your-mouth tender. Delicious amuse-bouches. Smiling, young staff, perhaps a touch rushed. A truly wonderful place!

Perfect from start to finish. Bravo to the chef for this discovery and this delicious dinner. Each dish was a true delight. The team is incredible, attentive, and caring throughout the meal. A special mention goes to the sommelier, Maria de Jesus, who is simply exceptional, professional, efficient, and offers excellent advice. My only regret is that I live too far from Fontainebleau.

A place out of time. Luxury cabins on stilts at the end of a pontoon overlooking the lake. Shower, bed, bean-to-cup coffee maker, refrigerator, microwave, huge ceiling fan, Nordic bath. Peaceful, except for the noise of the neighbors—I'm talking about the ducks, geese, swans, and coypu that inhabit the marsh.

Good restaurant but the service is a bit disorganized

What can I say?! A complete gastronomic journey with this virtuoso chef and his European cuisine infused with Far Eastern flavors. We opted for the five-course tasting menu with wine pairings. Sublime from beginning to end. Exceptional service, an ambiance worthy of such an establishment. My only slight reservation concerns the dining room decor, which I found a bit lacking in intimacy, but that's subjective. I highly recommend it, even with its princely prices, as it's an extraordinary experience.
