Perfect from start to finish.
Bravo to the chef for this discovery and this delicious dinner. Each dish was a true delight. The team is incredible, attentive, and caring throughout the meal. A special mention goes to the sommelier, Maria de Jesus, who is simply exceptional, professional, efficient, and offers excellent advice.
My only regret is that I live too far from Fontainebleau.

A place out of time.
Luxury cabins on stilts at the end of a pontoon overlooking the lake.
Shower, bed, bean-to-cup coffee maker, refrigerator, microwave, huge ceiling fan, Nordic bath.
Peaceful, except for the noise of the neighbors—I'm talking about the ducks, geese, swans, and coypu that inhabit the marsh.

What can I say?! A complete gastronomic journey with this virtuoso chef and his European cuisine infused with Far Eastern flavors. We opted for the five-course tasting menu with wine pairings. Sublime from beginning to end. Exceptional service, an ambiance worthy of such an establishment. My only slight reservation concerns the dining room decor, which I found a bit lacking in intimacy, but that's subjective. I highly recommend it, even with its princely prices, as it's an extraordinary experience.

The journey begins even before the first bite: an orange blossom-scented napkin for washing hands, a gesture borrowed from Japanese tradition, followed by a sparkling bergamot lemon, its bubbles seemingly straight from the garden. Amuse-bouches follow, including foie gras and oysters, and another made entirely of ice, fresh and flavorful. The beautiful A4 Wagyu beef is presented at the table, a promise kept for later.
1. The Tomato. Oregano, a tomato juice jelly with a touch of vinegar, the tomato presented in three forms, and a lemon-infused olive oil drizzled with a pipette. Surprisingly refreshing.
2. The Yellowtail. Cooked in binchotan charcoal, tataki-style, with artichoke and shiso. I rediscover the artichoke heart and the shiso leaf resting on a tempura petal.
3. The Triptych. Unagi, foie gras, Japanese bread, and a pat of Bordier semi-salted butter. Delicious and surprising, the portion left me wanting more.
4. The "onsen" egg from the Galaches farm. Slow-cooked for 45 minutes at 65 degrees Celsius, with minted peas, bottarga, and Vin Jaune. What an egg! I'd never tasted anything like it. Accompanied by a glass of Féral wine: orange, ginger, and juniper.
5. The lobster. Smoked with rosemary, broad beans, and lemongrass bisque. Excellent.
6. The Wagyu A4 beef, of Japanese origin. A true cut of Wagyu, with a carpaccio seared over binchotan charcoal and eggplant with miso. Served with a magnificent knife from the cutlers of Fontainebleau.
Before moving on to dessert, an amuse-bouche of fromage blanc and lime refreshes the palate.
7. Strawberries. Meringue, yogurt, celery sorbet. Surprising and magnificent. The celery sorbet with strawberries is incredible. And the effect of the sugar leaves: they looked like plastic sheets, which transformed the moment the strawberry coulis was poured over them.
8. Apricot. Roasted with honey, soy milk, verbena, vanilla cream. A perfect match for this feast.
And to finish, before tea, a trio of petits fours that didn't disappoint: a mochi to die for, a coconut bite bordering on ecstasy, and a final one based on dark chocolate, simply divine.
A word about the service, because it's just as important as the food: smiling and warm with the customer, a great rapport between the staff, with real coordination when clearing the tables. It had been a long time since I'd seen such precision.
Eight stops, a true journey. I only kept a few photographs: the others wouldn't do justice to what I had the pleasure of experiencing.

Warm team, refined cuisine from appetizer to dessert. Good wines. Returning to L'Axel in September 2024 – still highly recommended. Well done, chef, on the seafood menu (November 7, 2024). Several visits in 2025, no disappointments. Always outstanding.
