Le Bistingo is a unique restaurant in France that would probably do better in a more cosmopolitan city such as London, Singapore, New York or Melbourne. At this price point most restaurants are just copying each other and serving the same fare without anything that really excites the palate. Le Bistingo is different. It neither uses the predictable subtle classic French approach, nor the heavy-handed bouchon approach, but rather seeks a fusion of flavour. The classic magret du canard is transformed with a risky pairing of no less than 4 sauces, possibly 5. Had I eaten with care I might have been able to better appreciate all of them. Visually, it is possible to see a beetroot, red wine jus, possibly black sesame, with the main pairing being what tastes to me like curry sauce, with a hint of tropical fruit, possibly mango. It is a complex and daring combination. Critically, it works to deliver a punch of flavour that elevates the duck to a complete brand new experience. The duck itself is not cooked to perfection, with crispy skin and glossy even pink, however, it is 10 times the size of a starred restaurant, at half the price. It is nevertheless cooked to an appropriate medium rare without being dry. The main curry sauce tastes remarkably like a beloved sauce in Singapore, where it is a secret sauce of Macdonalds. You could sell a million bottles a month if you sold this sauce in Singapore, because no one has uncovered the recipe except for this chef in Dijon. To be honest we ended up eating here because we were rejected at many other popular places. A lucky occurrence because we otherwise would not have come. Rather than begging for a table at arrogant restaurants with half the character, I recommend coming here to feel welcome and have a delicious meal. You can also book on Google like a modern restaurant. Excellent.

Hug at the entrance, and I won't tell you the rest, excellent food, crazy atmosphere!

If you like Cap d'Agde, this is a real treat. The waiter welcomes you completely naked on roller skates. He also knows how to do the trick, and the food is excellent.

We stopped by by chance, but what a wonderful surprise! The welcome was fantastic, the pasta was excellent and well presented. I really recommend it. Thank you for everything.

Super nice restaurant, with a terrace in the summer in a quiet and sunny passageway. Robin is welcoming and warm. The dishes are good and plentiful.
